Cheeze, please

Yo, yo, yo (said in my best Jesse Pinkman voice for any Breaking Bad fans out there) here we are with another what I ate Wednesday. If you’re not watching Breaking Bad by the way, you should be. I don’t know what we’re going to do when season 3 ends in a few episodes since Netflix still doesn’t have season 4. Any ideas? I’ll likely be going through withdrawal which seems appropriate given the fact that it’s a show based on meth.

Food!

Breakfast:

Lately, I’ve been getting up and not knowing what the heck I want to eat for breakfast right away so I head to the computer, sip my oj and take my time deciding instead (obviously one of the perks of working from home is having that time to decide since my kitchen is steps away). Around 9am I decided on some Van’s waffles, one with peanut butter, one with coconut butter, both with bananas, chia seeds, almonds and coconut. That’s a lot of commas in one sentence. I have no idea if that’s even grammatically possible. It’s probably not. Grammar wasn’t my thing.

Lunch:

Sometimes I just start pulling random things out of the fridge, shove them between slices of bread, press it and hope for the best. This was one of those times. Edamame dip (makes an awesome sandwich spread), spinach, peppers, sliced cajun turkey and cheddar cheese. There was also an apple with chocolate hazelnut butter on the side that escaped the camera.

Dinner:

This is what’s called roast everything you can find, add some spinach, black beans and avocado, throw it in a bowl and top it with cheeze sauce.

So easy, so healthy, so delicious. I love meals where I can fill up a serving sized bowl, eat it all and feel good about it.

Dessert:

cookies

I snacked (desserted?) on a few (or 4) of these cookies throughout the day. No guilt, there’s a cup of grated carrots in these and they taste like a cross between carrot cake, coconut cake and a lemon bar. Recipe coming soon!

I’m pretty excited for your dessert recipe! Have you watched True Blood. I’m pretty sure those old seasons are on Netflix. Even if you are not a vampire fan, you will get sucked in. I hate Twilight but that show is amazing.

Great Eats! Everything looks so delicious. I love being able to threw everything you can find into a bowl, mixing it up and topping it with a dressing. My favorite thing to do is to throw a bunch of roasted veggies together and top it with marinara sauce!

I don’t even know which meal to comment on?!? The sandwich looks awesome, I think we have one of those panini things on our registry, I’ve lost track of what is on there to be honest. And I love the roast everything idea, although my fiancé would be like umm where’s my meat?? Haha what is the cheese sauce you use?

Your breakfast and lunch look very similar to mine today :) I am definitely interested in the recipe for those carrot cake balls. Yum!
Also, my husband and I have plans to start watching Breaking Bad next week. I’m scared I’ll get addicted – I have a tendency to do that with good shows ;)

The roasted vegtables look great! I think I am going to make that tonight for dinner! I just love roasted veggies, there my favorite way to get my vegetables in and left overs are great! Love them in my eggs the next morning!
