This coconut lime smoothie is a refreshing, icy drink perfect for summer. Enjoy with or without rum.

I know smoothies have ice in them but this coconut lime smoothie is particularly “icy”, almost like a slushie.
It’s a half smoothie, half Italian ice kind of consistency with a whole lotta piña colada going on.
Mmmk?
These were made around 3pm on a day that I woke up to a half broken blog and proceeded to spend an inordinate amount of hours (still in my pajamas) glued to the computer, on the phone with my server tech support and deleting, reinstalling and configuring new plugins. If you have a blog, I know you can sympathize.
If you don’t, just imagine pure stress and a feeling of utter hopelessness. Here’s the thing about blogging, it doesn’t come with a manual or any (free) tech support. Shit breaks and it’s all on you. When “you” has learned everything through trial and error or past experience it can be kind of fun.
And by fun I mean completely infuriating. So yeah, that was a “fun” day.
Want to know what I could really have used after that? Some alcohol. But, since 5pm was still two hours away, I behaved and resorted to the next best thing. Coconut, lime, ginger, mint and teeny tiny bit of kefir for a tangy kick all mixed up with a ton of ice in this coconut lime smoothie.
Next time, I might try something more decadent like this coconut panna cotta or this coconut lime ice cream float.
It instantly took me to a tropical beach somewhere and my head desperately needed that. My body wouldn’t have minded it either but I haven’t figured out a food or drink that has that ability yet.
So in conclusion, we’ve learned that blogging leads you to drink and when that isn’t possible it makes you hallucinate.
Obviously, I’ll be continuing with it.
Coconut Lime Smoothie
Ingredients
- 10 ounces coconut milk from a can
- 5 leaves of mint, plus more for garnish
- 1 tablespoon honey
- 1/4 inch nub of fresh ginger
- juice of 1/2 a lime
- 1/4 cup kefir
- 3/4-1 cup ice
Instructions
- Combine all ingredients in a blender and blend until smooth but still icy.
- Add additional crushed ice to two glasses, pour in drink and garnish with more mint leaves.

Italian ice meets pina colada. I’m in! And kefir! love it! I thought for a minute it said kefir lime, too. Both kefir’s are great :)
I havent yet had any blog problems and don’t even know what plug-ins mean… But I’m sorry about your blog probelems and glad everything is fixed. All ingredients in this smoothie are so good in itself and everything together is even better! I wouldn’t ever have dreamed of combining all these. Yum!
haha, plugins don’t exist for blogger sites (as far as I know at least) so that’s why you haven’t heard of it ;) And luckily for you, unless you move to self-hosting you won’t have any of these kind of problems on blogger!
Ugh, I’m sorry you had so many blog problems. I know how anxiety-producing that can be! These smoothies would be such a great way to unwind after a stressful tech session (especially with that shot of rum).

Yum! This is totally my kind of smoothie – bright, tropical flavors and lots of ice. Rum would have definitely been nice, but good for you for not drinking on the job. ;) And aren’t those pink straws the best? I bought them for blogging, but now I use them all the time. Water just tastes better through a hot pink straw!
I hate when I have tech problems with my blog. It sucks! When I transferred over to self hosting, oh my gosh! I lost my e-mailers, posts, pictures, everything and I had to re load it manually, because nothing is never easy. I cried, I ate a ton of yogurt because it was the easiest thing to reach for and I sat at my computer from a Friday night – Sunday morning, with about 5 hours of sleep that weekend. It’s horrible having these kind of problems, it makes you want to give up, but in the end once you cool your jets and fix the problem, all is better.

3 pm is a perfectly acceptable time to have some rum, it’s in a smoothie after all! I hope there aren’t too many more ‘fun’ days ahead either. That totally stinks!
