Coconut Lime Smoothie
This coconut lime smoothie is a refreshing, icy drink perfect for summer. Add some rum for an easy summer cocktail or keep it virgin.

Ingredients

coconut milk from a can

leaves
of mint
plus more for garnish

tablespoon
honey
1/4
inch
nub of fresh ginger
juice of 1/2 a lime

kefir

ice
Instructions
Combine all ingredients in a blender and blend until smooth but still icy.
Add additional crushed ice to two glasses, pour in drink and garnish with more mint leaves.
Notes
This would be delicious with the addition of some rum.
