Rustic rosemary cheddar bacon biscuits

Rustic’s a fun word isn’t it? It’s basically used to describe something resulting from laziness except it somehow manages to put a positive spin on it.

Too lazy to roll out your biscuit dough and cut out perfect circles? No problem! Just lump some dough onto the baking sheet, it’ll look rustic.

Remember the soup I had for dinner the other night? Well there was one serving left for lunch yesterday and I just couldn’t handle eating it with another pathetic piece of sliced wheat sandwich bread. Too boring.

So, I made 9 biscuits. And now I need 8 more servings of soup.

Does anyone else do this? I constantly cook/bake things when I have a small craving for something specific and totally ignore the fact that I’m going to have a million extra servings or leftovers afterwards. I’m not necessarily complaining, but it’s getting a little out of hand over here.

Currently on my kitchen counter or in my refrigerator are cranberry chocolate chip cookies, tropical salsa, cranberry almond biscotti, pomegranate bark, sugar plums and now biscuits.

This is one of those rare times when I wish I had office coworkers to pawn some of this stuff off on. Or, I guess I could look at it this way and be thankful I work from home since I can wear yoga pants all day and not worry about jeans not buttoning when I eat all this stuff.

True fact: I haven’t worn jeans since coming home from Florida over a week ago. That can either be awesome or truly pathetic depending on how you look at it. I’ll let you decide.

The biscuits really need no explaining. There’s bacon, cheddar, rosemary and obviously, butter. If you need convincing with that list, I’m really not sure we can be friends.

Rustic, lazy, whatever. They’re delicious. Find some leftover soup an excuse to make them.

Rustic Rosemary Cheddar Bacon Biscuits

Cheesy, flaky and buttery, everything a biscuit should be. Oh, and bacon.

Serves: 9

Ingredients
  • 1 cup all purpose flour
  • ½ cup whole wheat pastry flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sugar
  • ¼ teaspoon salt
  • ⅔ stick of cold butter, cut into cubes
  • 1 tablespoon fresh rosemary, minced
  • 2 slices of cooked, crispy bacon, finely chopped
  • ½ cup grated cheddar + extra for topping
  • ⅔ cup milk

Instructions
  1. Preheat oven to 425 degrees. Line a baking sheet with parchment paper or a silpat.
  2. Combine dry ingredients in large bowl and mix together.
  3. Add cubed butter to dry ingredients and press with a fork until the flour mixture is crumbly and well combined.
  4. Add rosemary, bacon and cheddar to bowl.
  5. Pour in milk and mix until just incorporated. Do not overmix. Use your hands to bring the dough together if necessary.
  6. Spoon dough out onto baking sheet in about ¼ cup spoonfuls.
  7. Top biscuits with extra cheddar.
  8. Bake for 12-15 minutes until golden brown around the edges and the cheese is bubbly and starting to brown.
  9. Serve hot.

I love the word “rustic”. Any time something looks a little off/messy (pie crust is a good example), call it rustic and it sounds a little more gourmet.

I’d say it’s awesome that you haven’t worn jeans in over a week. I’m in the same boat. It’s just so hard to go from comfy yoga pants to anything with a non-stretchy waist. ;)

omg, i love that you just lump dough together..it DOES make it look rustic!! i hate being all perfect sometimes. these sound awesome..they’re like something you make in a restaurant. i need to make biscuits soon (i still haven’t, blah!) so this will be on the list :)

I always bake as soon as I have a craving and wonder why my freezer is full of random cookies and muffins with freezer burn:)

You only ate one biscuit with your soup? For shame. I would have had like three. Mike and I usually get a chibatta loaf when I make chili and eat like 90% of the loaf between us in one sitting.

Ohhhh….if someone wasn’t already bringing biscuits to our get together…and if I had the time to make something extra (haha!)…I would have SO made these right away. They look phenom. As do all your recipes of course. :)

These look incredible! The rosemary, cheese and bacon sound awesome, and I love making biscuits like these, but like you I usually decide on them when I’m mostly done the soup or whatever they’re supposed to go with. Oops. These really look delicious though, I’ll have to think of them when I first make a pot of soup :D

I am totally on the same page with constantly cooking and having to eat it, and cooking multiple things at the same time and then buying more cookbooks or finding more blogs only to cook more!
I am throwing a party tomorrow and the only reason why is because I have a few recipes I am dying to try! It is pathetic, but so good :)

Yes, definitely let me know! I’ve only tried tempeh bacon once and it was pretty good. I’d imagine it would work well in these.
