Paleo challenge: day 30

From Jan 1 – 31 I’m doing a strict paleo (slightly modified Whole30) challenge with my CrossFit box. I decided to journal the month in food on here (in addition to normal posting) after getting a huge positive response on my Facebook page. I’m also going to detail the amount of sleep I got, the workout for the day and any other relevant notes. I’ll only detail drinks when it’s something other than water or tea, but note that I typically drink 80-100 ounces of water a day. I’ll link to recipes (either mine or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted.

I had a lot of energy and I was ravenous today hence the double workout and snacks. 1 more day…

paleo chocolate banana waffle

1 fried egg

kiwi

blueberries

almond butter

coffee with coconut cream

Lunch:

tuna salad (dijon mustard, raisins, celery)

yellow pepper

1/2 apple w/ almond butter

paleo tuna salad

Dinner:

dijon almond crusted tilapia

pan-fried plantains

roasted okra

almond crusted tilapia

Snacks:

larabar

carrots w/ almond butter

blueberry muffin larabar

Great job! You are so creative in making a variety of foods. I am curious to know what you thought about the whole experience, but I am sure you're going to write about that. ;)

Awesome work Gina! You are killing it :) I've seen all these pictures of people participating in Crossfit and I saw the place in town (it's near my house actually) that does it. I'm starting to get intrigued...
