I used to think it was all about the pie (the farm market down the road that makes every fruit pie under the sun aiding my bias a bit) but tarts lend themselves to the whole no-bake thing and let’s be real, that trumps making pie crust any day. So, I became a tart person.

I mean, just look at that adorable mini tart shell crust. I’d say it beats a pie any day.

Much like my opinion about pie shifted, so has my thoughts on avocado in desserts.

I used to think this trend to throw it in smoothies, combine it with chocolate in everything from cookies to muffins to truffles and even make ice cream out of it was completely whack.

It’s an avocado, people! Let’s keep it to tacos, guacamole and salads.

But, not any more.

This Lime Avocado Tart is a simple and healthy no bake summer dessert

It’s tart, creamy and refreshing with a perfectly chewy, sweet crust.

It’s gluten free, grain free and paleo too made with dates, nuts, coconut oil and of course, lots of ripe California avocados and fresh lime juice.

The ingredient list is simple, natural and the tart couldn’t be easier to put together.

It stays wonderfully in the freezer too so you can have always have some on hand to crush a summer dessert craving.

No Bake Lime Avocado Tart

Servings: 12 servings

This avocado tart full of zesty lime flavor, no bake, paleo, grain free and gluten free makes the perfect refreshing summer treat!

Ingredients 

For the crust

  • 12 pitted medjool dates
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup pecans
  • 2 tablespoons melted coconut oil
  • zest of 1 lime
  • pinch sea salt
  • 1/2 -1 tablespoon water, if necessary

For the filling

  • flesh from 2 California avocados
  • 1/2 cup fresh lime juice
  • zest of 1 lime
  • 1/4 cup agave

Instructions 

For the crust

  • Combine all the ingredients for the crust, except the water in a food processor and process until they come together. Add water with processor running until mixture holds together when pinched. You may not need the water if your dates are fresh enough. If they’re too dry, the water might be necessary. Add slowly, you won’t need much at all.
  • Press mixture into the base and all the way up the sides of 3 mini (4 inch) tart shells.
  • Place the crust shells in the freezer to set while you make the filling.

For the filling

  • Combine the avocado, lime juice, lime zest and agave in the food processor and process until smooth and creamy, scraping down sides as needed.
  • Remove crust shells from the freezer and pour the filling evenly into each shell. Smooth the tops with a spatula, place tarts on a baking sheet and return to freezer for at least 1 hour to set up to overnight. If tarts are difficult to remove from the shell upon serving, place the bottoms in a hot water bath for 10 seconds and they’ll pop right out.
  • Store in the freezer in an airtight container or bag to prevent freezer burn.
