Pad thai salad

This Pad Thai salad is a vegetarian inspired take on the famous pad thai dish.
Pad thai salad

This whole paleo challenge thing the second time around hasn’t been so easy. It’s warmer, there’s ice cream to be had on weekends and pizzas to devour when your husband has this new obsession with homemade ones on the weekend and that’s just way more fun than paleo. Honestly, the only thing keeping me from saying “screw it” to the whole shebang has been the fact that we’re partnered up this time. If I cheat, my partner gets no points for the day and vice versa. The guilt. It gets me.

Did I want to eat a salad the other day for lunch?

Nope. Not at all.

So I made it really pretty, made a kick ass creamy, spicy dressing that I drenched it in and tried to excite myself about a bunch of leafy greens that were supposed to mimic my favorite Thai dish except minus the best part, the noodles.

And shockingly, it worked.

The only bad thing about this was the fact that I ate it not even 30 minutes before a sled pull workout. Not my brightest idea.

Now only if I could kick this 10pm cookie craving I’m currently having while writing this with a giant colorful salad.

After finding this recipe last weekend, I’m thinking the salad is gonna lose this battle.

Sorry, paleo.

Dieting no matter which diet you’re on is so hard to do, check out my friend Heather’s site multiplydelicious.com for more paleo recipes, she has lots of tasty versions and an ecookbook too. Good luck .

Have our husbands been talking? Mine has been requesting homemade pizza almost every week for the past month and a half! I’m a Thai food junkie, and your salad is loaded with some of my favorite flavors. Plus, it’s a knock out!

Girl, I don’t know how you’re doing the paleo thing again, but I guess they knew what they were doing with the partner thing ;)

Seriously though, this is dinner next week. Yet another one of your recipes that I’ll be coveting til I make it!

I’m really half-assing it this time around ;) 2 out of 3 meals qualifying as paleo is a good day. I’m just so over it and ice cream > potential six-pack abs. Always. :)

Challenge aside, I am a firm believer in a “cheat” meal. If you are craving it…Make it! The salad looks fantastic BTW.
Question, How did you get the recipe printing widgget on your site?

    This salad looks gorgeous!

Are you doing a paleo challenge? Is it just for fun or health reasons? I’m just curious. I’ll probably find my answer if I just go back a few posts, so I’m off! :)
