Paleo challenge: day 25

From Jan 1 – 31 I’m doing a strict paleo (slightly modified Whole30) challenge with my CrossFit box. I decided to journal the month in food on here (in addition to normal posting) after getting a huge positive response on my Facebook page. I’m also going to detail the amount of sleep I got, the workout for the day and any other relevant notes. I’ll only detail drinks when it’s something other than water or tea, but note that I typically drink 80-100 ounces of water a day. I’ll link to recipes (either mine or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted.

Notes for the day:

I think I’d like this whole strict paleo thing a lot more if someone could just prep all my meals for me. I feel like I’m constantly in the kitchen, constantly defrosting meat and going through protein at an alarming rate. I can’t quite figure out the difference between before and now considering how closely I ate to this but I think it was lunch. Beforehand lunch would be a lot more eclectic and less dependent on animal protein whereas now, I need a full serving size of some sort of meat or fish to feel satisfied. I just want a break from the kitchen!

Sleep:

8.5 hours

Workout:

1 mile run + Crossfit

Breakfast:

pantry paleo granola (pecans, cashews, almonds, chia seeds, walnuts, pepitas, dried apricots, raisins)

blackberries

1/2 banana

blueberries

coconut milk

almond butter

coffee with coconut cream

paleo granola

Lunch:

spicy salsa verde chicken

watercress

roasted carrots & parsnips

1/4 avocado

salsa verde chicken

Dinner:

pork carnitas

carrot & parsnip puree

roasted okra

pork carnitas

Snacks:

paleo coconut flour pecan cookie with almond butter

post wod – 1/2 protein shake

You’re doing such a great job! I did the 30 day challenge several months ago and I felt like I was always always in the kitchen too. I must say all of your meals look wonderful, though. Kinda makes me want to do the challenge again…kinda…. ;)

I feel ya about being in the kitchen all the dang time! I love eating this way but I’m so over washing so many dishes and only spending my extra time in the kitchen.

I am so impressed on how you have made it this far. I tried doing fruit and vegetables only diet for the weekend and i felt like i did nothing but constant cooking, cleaning and planning my meals and at some point it got really frustrating!
