I’ve got a bone to pick with people on airplanes.

It’s like all semblance of societal norms and courtesy leaves their bodies the minute they pass through the security line.

Actually, scratch that, it’s more like the minute they walk through the doors of the airport because we all know the ticketing area is no walk in paradise.

I got to the airport yesterday with under 50 minutes to spare thanks to New York traffic and the UN general assembly (one of the very few times I actually wished I paid attention to the news and/or had cable to know that was going on as I needed to drive pretty much smack into it to get to LaGuardia), had to park approximately ½ a mile away from the terminal thanks to the lovely parking construction fiasco currently going on at the airport and was a hot, sweaty, frazzled mess by the time I rolled up to security.

From the erroneous metal detector to the TSA agent in training who took approximately 7 minutes to figure out HOW to pat me down and ensure I wasn’t hiding a bomb in the 4 inches of fabric between my waist and bottom of my shorts to the people incapable of following the instructions being blasted over and over on the PA to put your suitcase in lengthwise NOT horizontal to save room, to the dude who just clearly TOOK MY SEAT on the plane – like how does one even do that?

There’s a diagram plastered to the overhead, buddy. D = window, C = aisle. Are you that dumb? Are you just ignoring your seat assignment and hoping I won’t notice and/or say something?

To the person who just decided sitting wasn’t for her on the flight and proceeded to stand in the aisle the with her ass in my face for the entire time the seatbelt sign was off.

I.just.can’t.even.

Thankfully, I have no bones to pick with this roasted sweet potato apple ham sandwich.

It’s kind of a hot mess of a sandwich, much like I was yesterday rolling up to the airport but, it works.

It’s also what happens when my brain explodes with the possibilities of fall-like ingredients to shove in a sandwich and literally can’t narrow things down.

So, we have roasted sweet potatoes. Yum.

We have tart apples for that crunchy factor. Yep.

We have some lacinato kale that was just too gorgeous to pass up at the apple orchard farm market. Love me some local produce.

We have caramelized red onions. So buttery.

We have honey ham. My favorite deli meat. You could also used leftover ham from a double smoked ham from a holiday or from a grilled ham steak if you have that on hand.

We have melted sharp cheddar. Thank you, Cabot for your always delicious cheese.

And, we have honey mustard bringing it all together with each bite.

Back in July, I got to visit the Sabra factory in Richmond, VA for the release of the new Sabra Spreads product and I have to say, when they revealed what it was (it was a surprise until we got there), I was kinda like “well, DUH!” in my head – don’t worry, sometimes I actually have an internal filter.

If you’re a hummus lover already, chances are you’ve already been using hummus in this sandwich spread fashion.

If you’re not a hummus eater – a. get on that train and b. there’s now a whole new way to try hummus in a bit less intimidating way than dipping some chips or veggies into a bean puree by spreading it on your sandwich!

Your mouth will be happy with every bite of this roasted sweet potato apple ham pressed sandwich.

Not only is it tasty as heck (the new refrigerated hummus spreads come in three flavors – honey mustard, sea salt & cracked pepper and garlic herb) but using it in place of something like mayo on a sandwich is a really easy way to cut down on fats and up your protein and vegetable intake for the day.

I almost feel bad for the mustard, ketchup and mayo containers in my fridge because it’s like their fate just received an irrevocable death sentence.

Flip side, my mouth is happy!

Roasted Sweet Potato Apple Ham Sandwich

This roasted sweet potato apple ham sandwich is served hot and pressed with a generous amount of melted cheddar cheese and a honey mustard spread.

Ingredients 

For roasted sweet potatoes

  • 1/2 medium sweet potato, sliced into rounds about 1/4″ thick
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried rosemary
  • salt & pepper

For caramelized red onions

  • 1/2 small red onion, sliced
  • 1 tablespoon olive oil
  • pinch of salt

For the sandwich

  • 2 slices hearty bread of any kind
  • 1 tablespoon melted butter
  • 2 tablespoons honey mustard
  • roasted sweet potatoes
  • 6 slices cheddar
  • 1 large tuscan kale leaf, torn into pieces
  • 1/4 large green apple, sliced
  • caramelized red onions
  • 2 ounces about 4 slices leftover ham (or deli sliced ham)

Instructions 

For roasted sweet potatoes

  • Preheat oven to 425 degrees.
  • Place sweet potato rounds on greased or silicone mat lined baking sheet. Drizzle with olive oil and season with rosemary, salt and pepper.
  • Roast for about 20-25 minutes, flipping half way through until softened and golden brown around the edges.

For caramelized red onions

  • Place olive oil in a small sauce pot over medium heat.
  • Add onions and salt, reduce heat to medium-low and cook, stirring often until softened and starting to turn golden brown. Remove from heat and set aside.

For the sandwich

  • Brush one side of both pieces of bread with the melted butter.
  • Turn the bread slices over and spread the Sabra Spreads honey mustard on each piece.
  • Place the cheddar on top of the honey mustard spread on one piece of bread and continue layering in this order: sweet potatoes, kale, apple slices, red onions and ham. Place the other piece of bread on top with the buttered side up.
  • Place the sandwich in a pre-heated skillet and press down firmly with a large spatula to help melt the cheese.
  • Flip after 2-3 minutes once bread is golden and crispy on the bottom and repeat on the other side.
  • Cut the sandwich in half and serve warm.
