I have a love hate thing going on with the month of March.

On one hand, it (finally!) means more light at night on the other, it’s still threatening snow storms in the 7 day forecast. It means spring yet reality is nothing green will actually be gracing us with its presence for at least another month.

It also means March Madness and oddly, given my hatred of football, that’s not something in the hate column when it comes to March.

There are precisely two traditional sports I actually enjoy watching, hockey and basketball. So a month of basketball madness, talk of brackets and games on every public tv set doesn’t incite the same kind of inner fury as the Superbowl. In fact, I kinda like it.

I almost wish as much talk, prep and planning went into March madness as the Superbowl. At least then I could combine good food with a sport I actually like instead of sitting through 4 hours of torture from plays that last approximately 5 seconds to sad puppy commercials and horrible white-girl-can’t-dance half-time shows.

Strawberry and Goat Cheese Roast Beef Sandwich

Cobblestone Bread Co. challenged me to come up with a game worthy sandwich for the month of March. Here’s how my mind works when it comes to sandwiches: ROAST BEEF. The end.

Seriously, I can’t walk into a deli and walk out with anything other than roast beef. Turkey, meh. Ham, definitely not. Salami, I love it but no. Bologna, omg gross. Roast beef for the win. Always.

I’ll normally default to good ‘ole Russian dressing but since it’s March and all and spring is right around the corner, I wanted something a bit more seasonal. Smashed goat cheese and ripe strawberries make the perfect spring spread for this game day inspired bite. Strawberries are finally getting good again and mashed together with goat cheese, they make a tangy sweet topping perfect for livening up an otherwise meat packed sandwich. I used Cobblestone Bread Co. cracked wheat kaiser roll for these which worked perfectly. Sandwiches aren’t all about the insides, the bread matters too. There’s nothing worse than a bad bread to filling ratio when it comes to a sandwich. Too little, no good. Too much, a mouth full of carbs instead of flavorful filling, also no good. These rolls are right in between for the perfect hearty bite.

Strawberry Goat Cheese Roast Beef Sandwich

This strawberry goat cheese roast beef sandwich walks the line between gourmet and game food. Stuffed with roast beef and topped with a strawberry goat cheese spread, it’s a bit of both in each bite.

Ingredients 

  • 1 pound sliced roast beef
  • 4 ounces goat cheese
  • 1 pint strawberries, hulled and chopped
  • 1 bunch watercress, roughly chopped
  • 4 Cobblestone Bread Co. cracked wheat kaiser rolls

Instructions 

  • Combine strawberries and goat cheese in a small bowl. Mash with a fork until combined and set aside.
  • Spread the strawberry goat cheese mixture on the bottom of each roll. Top with some watercress, then 4 slices of roast beef, more strawberry goat cheese spread and finish with more watercress. Place the top of the roll on the sandwich and repeat with the other 3.
