Breakfast:

breakfast v2

Pumpkin waffle with some fruit, almond butter and maple syrup. I ate the same exact thing on Monday (this waffle was leftover from that batch) and I’m sad there aren’t any more. I used to think waffles were a weekend only breakfast but when you use a pancake mix and only have to add a handful of ingredients it barely takes any longer than stovetop oatmeal. I need to do this more often during the week. It definitely made going back to work on Monday morning (while the rest of the country had the day off!) a little more tolerable.

Lunch:

lunch v2

An egg bake that I’ll be posting about later this week. It’s such an easy lunch or dinner. And there’s feta. Lots of feta. In our house it’s FEH-TA, like a true Greek would say.

Snack:

You ready for this? Dark chocolate, banana and peanut butter in a smoothie. Think texture and flavor of a Frosty except add PEANUT BUTTER! So, so, so delicious. It tasted like dessert and yet, it really wasn’t. (Recipe below)

Chocolate Peanut Butter Smoothie

Besides the fact that it was 21 degrees outside when I drank this and I shivered the rest of the afternoon, this was amazing. It trumps any and all smoothies I’ve ever made and will definitely be making future appearances in my afternoon snack routine.

Dinner:

dinner v2

Linguine with meatballs and avocado sauce. Meatballs aren’t really the most photogenic meal in the world. After this picture, things got even uglier when I tossed it all together and mashed the meatballs up to create one giant, tasty mess.

Dessert was an unpictured Godiva dark chocolate truffle. They’re so rich, I had actually taken two chocolates but couldn’t eat the second one after the truffle. That never happens to me with dessert.

On an unrelated note, two important things are happening today.

1. This girl is getting that bump (it’s a wart) on her head removed finally. We’ve decided she’s looked like Frankendog long enough.

2. I’m getting a haircut and considering bangs. Bangs! I can’t even write it without freaking out. We’ll see how this goes…

  1. Smoothie looks yummy except for the peanut buetter…you know how much I hate peanuts… but subbing nutella or almond butter is worth a try for me,.

  2. I really need to start coming to your blog AFTER lunch ha….everything always looks amazing!

  3. I’m not sure which of your Wednesday eats I want to try the most. They all look AMAZING! Okay, I’m a little partial to the Chocolate, Banana, and Peanut Butter smoothie since chocolate + peanut butter is probably my favorite flavor combo, but everything looks delish!

  4. I commend you for at least trying to (and pretty much succeeding in) getting nice pics of meatballs.

  5. I haven’t had a frosty in forever! I bet a PB version would be so awesome.

I wanted to mention that I love your new recipe format! It makes your blog look super-professional. Also, congrats on the recent mention of your doughballs! I was excited for you when I saw that.

PS – Light Enough to Travel’s name has changed! :)

    1. Thanks Jen! It makes it easier too for me so I’m glad you find it helpful/easier too :) I saw the name change, I like it!

  6. Ohhh my word. I can’t tell which looks better to me…the breakfast or the smoothie…I think the smoothie, but its a toss up! I come here to wish and drool, thank you ;)

  7. Your breakfast looks so yummy!

I had bangs in middle school. Ehh.. I don’t know if i would really call them bangs. Rather.. one small layer of hair that I cut myself.. and then trimmed myself. It was rather comical looking as I look at pictures today!

  8. I can’t wait for the egg bake recipe. That looks incredible.

Poor Ginger! She’s so freaking cute cuddling her giraffe.

BANGS! I’m scared. I hate all bangs after a traumatic experience where I had them basically from birth to freshman year of high school.

  9. That smoothie is right up my alley! Same flavors that I used yesterday in mine, too. Now just tell me why are we drinking smoothies when it’s so cold out? Oh well, they’re freakin’ delish!

  10. That egg bake looks fantastic! I want the instructions! I make omelette’s like everyday for lunch w/ spinach but this looks like a new option!
