I don’t even know how to focus on this smoothie as I’m currently shoving a brownie bomb in my face as I write this.

Chocolate, sweet, sweet chocolate, oh how I’ve missed you.

Thing is, I actually feel pretty lame when I post smoothie “recipes”. They feel like part cop-out, part like I’m calling you an idiot for not being able to come up with concoctions to throw in a blender with some ice.

Really though, this is neither. It’s just a pretty freakin’ tasty, simple combination that I hope to be drinking something very similar to in 16 days in the Dominican Republic, on a beach, in one of my new bathing suits.

Maybe with just a weeeee bit of rum though too.

A taste of the tropics in a simple smoothie.

Ingredients
  • 1 cup cubed pineapple
  • 1 kiwi
  • 5-6 mint leaves
  • ½ cup coconut milk
  • 3 ice cubes

Instructions
  1. Combine all ingredients in a blender and blend until smooth.

I was about to say…I hope you DO have one of these in DR, but with some kind of alcomahol in it :) haha. This sounds tasty and hey! Sometimes you need a cop-out, easier-than-life recipe and sometimes it’s so delicious that other should know about it. I mean, I can name off 84748973 recipes I’ve seen online where I’ve literally said, “I’d hardly call that a recipe.” BUT THEY’RE STILL DELICIOUS. Anyway, the thing I was getting to with this comment: I’ve never had a kiwi. Don’t hate me. Maybe I should use it in a smoothie to give it a try.

Enjoy your time a way and great going, completing the Whole30…you deserve that brownie bomb and many more ;) I sometimes wonder if I should post smoothie recipes, but I think you scored with this one – it looks magnificent and actually, I’ve never thought to put kiwi or mint in a smoothie, so good going!

I’m interested to see if you stick with the paleo going forward. I’m super impressed with your consistency!! And smoothies are always a great recipe for everyone to be reminded of how tasty they are
