Peach lassi

Last Friday I made these. It was about 100 degrees outside, 4pm after what I thought was a long work week (this week wins that award by a landslide), fresh juicy CSA peaches sat on my counter and they just seemed like a good idea.

A lassi in a ball jar seems kind of weird now that I look back at it though. I’m picturing an Indian with a southern accent drinking them which is all sorts of wrong in my head.

Wrong like it was to spend 9 hours of yesterday in a freezing cold conference room while it was 90 degrees and sunny outside.

Wrong like it was to get nasty tofu from the Whole Foods hot bar when Chipotle was down the road Wednesday night.

Wrong like it was to spend $168 at Trader Joe’s and somehow forget my precious almond butter.

Wrong like I’m hoping the body fat % measurement I got during a health screening on Wednesday was. (28%!?…WTF?)

Luckily, it tasted right.

Like the trip to Italy that was booked this week.

Like this picture which keeps making me smile.

Like a grass fed burger, roasted sweet potatoes and a kale salad dinner after 3 days of not so healthy eats.

Like my own bed after 3 nights of hotels.

I think I need another, this time in a normal glass.

Peach Lassi

A refreshing peach yogurt drink made with coconut water.
Author:
Recipe type: drink
Serves: 2

Ingredients
  • 2 peaches, chopped
  • ½ cup coconut water
  • ¾ cup kefir (or plain greek yogurt)*
  • ½ tablespoon agave
  • ⅛ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • ⅛ teaspoon cardamom
  • pinch of salt
  • ½ cup ice

Instructions
  1. Combine all ingredients in a blender and blend until ice is completely pureed, pulsing a few time to break up chunks.
  2. Pour into glasses and garnish with pistachios, mint or cardamom on top if desired.

Notes
If using greek yogurt instead of kefir, you may need to add an extra tablespoon or two of coconut water as the yogurt is thicker than kefir.

Oh, weeks like this that are full of niggles are just so draining aren’t they? I hope you manage to have a nice and relaxed weekend full of happy thoughts about your Italy trip and lovely, lovely peach lassi!

Haha, thanks girl. That’s kinda what I’m thinking too. I expected low-mid 20s but not high 20s! Jeez! It was one of those stand on scale thingys so I’m refusing to believe it’s accuracy ;)

forgot the rose water…. Your dad made me crazy searching for rose water when he made a lassi….

Ya know, I have cardamom, but I don’t think I’ve ever used it. I saw peaches at the farmers market this week, but didn’t pick any up. Have you tried this with any other fruits??

I made a mango one last year http://www.runningtothekitchen.com/2011/08/mango-lassi/ (slightly different ingredient mix up but similar taste). You really could do this with an array of fruits though! It’s basically just a smoothie with spices :)

Hmmm… I don’t believe the accuracy of those body fat measuring things, if I remember correctly I believe it said mine is 27% and I am only 100 lbs (don’t freak out, I’m not anorexic, just super short and Asian).

Do you think milk would be a good sub for coconut water?

How did they measure your body fat? It might not be accurate.

and $168 bucks at TJ’s?!??! DANG girl. Usually I get outta there for under $40. You should share what comprises that. There has to be some good stuff in there that I am missing out on. Spill! :)

haha, I hadn’t been in almost 3 months (it’s about 35 minutes from me) so I stocked up. It’s nothing exciting, just a lot of doubles and triples of things since I don’t get there too often. And a lot of organic meat since I can’t find that easily around me. Chicken and beef add up quickly!

Great minds think alike? My peach lassi recipe was already in the can when I saw yours. On the body fat measurement: have you ever done the Bod Pod? They are supposed to be very accurate, I’ve used one a few times. Congrats on your Italy trip, I’ll bet your relatives will spoil you rotten with lots of great dinners. And gelato!

I haven’t, I really want to though after this last test. I know the stand on ones can be inaccurate, I guess I was still just surprised at how much! Or at least what I’m assuming to be how much, haha. I do want to find a place to do a more accurate reading though. I need to look into.
