
How was everybody’s weekend? I’m just going to pretend like you’re all working today like me and not really off because 1. it’s President’s Day and/or 2. you’re a teacher and have the whole freakin week off. Not only am I glued to the computer screen with some sort of Microsoft office program open today, but I also get to fly out this Sunday morning for work. Nothing better than JFK at 6am on a Sunday…
So to make up for that lameness coming up, I took full advantage of yesterday.
Pork roast doing it’s thing in the slow cooker and a Whitney Houston dance party in the kitchen.

It’s a shame it took her death for me to think to blast that station on Pandora because boy oh boy were there some gems that popped up. Boyz II Men, On Bended Knee (hello middle school socials), Cyndi Lauper, Girls Just Want to Have Fun, and every 90s Mariah Carey song you can imagine.

Whitney stole the show though with I Wanna Dance with Somebody.
That song is just the shit. I mean who doesn’t want to feel the heat with somebody? And if you’re not already dancing, (I was, Ulysses caught it on camera, I thought about posting it all for your Monday entertainment for about .02 seconds before my brain started working) you will be at the end when she’s all “don’t ya wanna dance, say you wanna dance, don’t ya wanna danncccee….” Of course you want to dance. Who can say no to Whitney?
Just put the chef knife in your hand down before busting out a move.

I tried to get Ulysses to dance with me in the kitchen (Whitney was telling me to with the whole “with somebody who looooves me” part) but he wasn’t having it. Ginger was a more than willing participant but you get her riled up and next thing you know she’s humping your leg (I think she may have been spayed too early and forgot she’s a girl) so the dance party ended rather anti climatically.

Until dinner that is.
One bite and it was a PAR-TAY in my mouth.
- 1½- 2 lb. pork roast
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons extra virgin olive oil
- 1 cup green salsa (I used medium for some heat)
- 1 teaspoon cumin
- 1 teaspoon coriander
- salt & pepper
- 8 whole wheat slider buns
- cilantro for garnish (optional)
- red cabbage, sliced for garnish (optional)
- In a large skillet over medium high heat, saute onions & garlic with olive oil.
- Season pork roast generously with salt and pepper.
- Once softened (about 5 minutes), push onion & garlic mixture to the sides and add the pork roast to the pan. Brown each side for about 2 minutes.
- Transfer pork roast with onion & garlic mixture to a warmed slow cooker.
- Add cumin, coriander and salsa.
- Cover and cook on low for 4-5 hours.
- Once cooked, place pork on cutting board and shred apart with two forks.
- Transfer shredded pork back into slow cooker and mix together with the salsa & onion mixture to coat.
- Toast slider buns, place pork on buns and garnish with cilantro & cabbage if using.

Pulled pork is amazing. Regular pork doesn’t compare to slow-cooked pork, no matter the sauce/toppings.
I do have today off – but ONLY today. I do not have the entire week off! haha!
Yum- a combo of bbq and mexican foods = delicious! I notice you said coriander- I thought they used the term cilantro in the US? Just a question!
We use cilantro in reference to the leafy green herb, but coriander when it’s dried

I’m not sure what I’m referring to – the dance party description or the sliders but both are making me smile this morning!
The pork sandwiches look like something David would devour, but I can’t stop singing Boys to Men now. On Bended Knee is fantastic, but I had the most magical slow dance to Water Runs Dry with a cute boy in the 6th grade at our Christmas dance. I can still picture it now… holding each other… well, actually, barely touching each other with our arms stretched out as far as they could go and awkwardly rocking back and forth… sigh… HAHA
Oh my gosh, I forgot about Water Runs Dry. Another middle school classic! Brittany-I can still remember the outfits I wore to those dances and the same long armed dances. How did we get this old?!
If it makes you feel any better I’m a teacher who has to work all week (joys of teaching at a private college!) At least you made the most of it and spent yesterday in the kitchen!

Driving back from a long hiking day trip yesterday, there was a Whitney Houston tribute on the radio. I had so much fun singing along to that song. It’s a real gem of a song that switches off whatever mood you are in to happy/dancy/sexy. This food looks beyond delicious.
I love slow roasts! I usually make one every Friday because it makes the house smell so dang good…oh and it tastes good, too. I’m going to have to try this one!
Don’t eat meat but can appreciate the photography challenges in this one…GREAT pics on what I would consider to be a very tricky thing to photograph
Yum! I love me some 80′s music, but my middle school dance memories are of Jump on It. Which I now have on and it kind of makes me want to bust out the dance. I should apologize to my cousin in advance for doing it at her wedding. I think a crock pot full of sliders should do it. I blame Sir Mix a Lot.

Uhmigosh…these are calling to me. I’m all about pulled pork and couple that with Mexican flavors? A definite winner!
I’m assuming if I want a dance partay in my mouth, I must make these orrrrrr have you hand deliver them, right? Seeing how the latter probably won’t happen, I guess I’ll suck it up and make these sometime all while dancing to Whitney — that’s my JAM!! Glad you could feel the same

These look so amazing. So many of my favorite flavors. We’re having homemade grilled veggie tacos tonight, I can never get enough of the Mexican inspired flavors.
BTW – I have had a different Whitney Houston song stuck in my head every day since she passed away, I keep dancing around singing them, some that I even forgot about it. My gosh did she have some killer, catchy tunes!
She was the best for dance music back then!
I work in a school and have today off (not all week), but b/c it’s off we aren’t getting paid. I’d rather be working!
