Instructions
Make the filling by placing the apple slices in a medium bowl and toss with the lemon juice.
Add the cinnamon, nutmeg, brown sugar and flour and toss to combine. Set aside.
Make the crisp topping by placing the diced butter in another bowl.
Add the brown sugar, flour, cinnamon, nutmeg and oats and combine with a fork until crumbly.
Assemble the crisp by placing half the apple slices in a large mug or small ramekin. Dot half the crisp mixture on top. Layer the remaining apple slices on top of that and finish with the remaining crisp topping.
Place in the microwave and cook for 2-3 minutes (**see note) until apples are soft and the crisp topping has melted and become crispy at the edges.
Serve warm with a scoop of vanilla ice cream or whipped cream if desired.

*Use gluten-free flour/baking blend if needed.**Cooking time will vary with microwave power. I did 2.5 minutes in my 950 watt microwave. Keep an eye on it starting around 1.5 minutes. You might need as little as that or as much as about 3 minutes.
