Ingredients

whole wheat pastry flour

all purpose flour

rolled oats

packed brown sugar

teaspoon
baking powder
1/2
teaspoon
baking soda
1/2

salt

teaspoon
cinnamon

ripe bananas
1/2
cup
pumpkin puree

egg

teaspoon
vanilla extract
or vanilla bean paste as shown in video

tablespoon
melted coconut oil
1/4
cup
almond milk
1/3
cup
chocolate chips
plus more for sprinkling on top
Instructions
Preheat oven to 350 degrees and grease a 9x5 loaf pan liberally with baking spray.
Mix all the dry ingredients together in a large bowl.
Mash bananas in a small bowl until smooth.
Add the wet ingredients to dry ingredients and mix until well combined.
Fold in chocolate chips.
Transfer batter into the loaf pan and smooth the top with a spatula.
Top with additional chocolate chips.
Bake for approximately 40-45 minutes or until toothpick comes out clean.
Let cool in pan for 10 minutes before removing from pan and transferring to a cooling rack.
