Ingredients

small head red cabbage
thinly shredded

green apple
thinly shredded or grated
1
large carrot
thinly shredded

raisins

minced fresh parsley

extra virgin olive oil

Dijon mustard
juice of 1/2 lemon

tablespoon
honey

shallot
minced
salt & pepper
to taste
Instructions
Combine the cabbage, apple, carrot, raisins and parsley in a large bowl.
In a separate small bowl whisk together remaining ingredients to form a dressing.
Pour the dressing over cabbage mixture and toss to fully coat. Adjust seasonings to taste.
Chill the slaw in the refrigerator for at least 30 minutes before serving.
