A healthier spin on classic peach fritters with juicy fresh peaches, a soft cake-like center and golden edges. No frying, no added sugar in the batter and 9g of protein each.
20gPromix vegan vanilla protein powder1 scoop, or sub with additional flours or other plant-based vanilla protein
1teaspoonbaking powder
generous pinch of salt
1/2teaspoonturbinado sugar for sprinkling on top, *optional
For icing drizzle
1tablespooncoconut butter + milk or water to thin 1 tablespoon, *optional
Instructions
Preheat oven to 375°F convection bake.
Combine the peaches, eggs, coconut oil, cinnamon and vanilla in a bowl and stir to combine.
Add the oat flour, gluten-free flour, protein powder, baking powder and salt to the bowl and stir to combine.
Scoop the batter into four equal amounts and place on a parchment lined baking sheet. Sprinkle with some turbinado sugar on top (optional) and bake for about 15 minutes until edges are golden brown.
While the fritters cool for a few minutes, mix together the coconut butter and milk (or water). Heat in the microwave in short burst until warmed. Add liquid until you get an icing-like consistency. Spoon the icing over the fritters.
Notes
*If omitting the protein powder, just increase either the oat flour or gluten-free flour by 20g to compensate.**I'm partial to Promix vegan vanilla protein powder for baking, but most other plant-based pea proteins will also work well. I do not recommend using other types of protein powder (like whey or beef isolate), they affect the consistency of baked goods too much.
