Dinner has never been so easy with this salsa chicken recipe. Chicken breasts are seared then topped with salsa and cheese. Baked to perfection in the oven with a cheesy melted sauce, this will become a go-to weeknight dinner.
Season chicken on both sides with taco seasoning, salt and pepper.
Heat a cast-iron skillet on medium-high heat. Add the olive oil then sear the chicken on both sides for 3 minutes. Transfer to a 9x13 inch baking dish.
Pour salsa around the chicken. Sprinkle sweet corn and cheese around and on top of the chicken breasts. Bake in the oven for 15-18 minutes until the chicken is cooked through and the cheese melts.
Remove from oven, let sit for a few minutes then garnish with cilantro and serve.
