Warm cinnamon sugar apple rings have a golden pancake coating wrapped around a crisp apple center. Think apple cider donut meets apple pancake, no deep frying required.
Combine the cottage cheese, pancake mix, eggs, spices and milk in a bowl. Use an immersion blender to blend until smooth. Alternatively, you can blend this in a regular blender.
Combine the sugar and cinnamon for the coating in a small bowl and set aside.
Dip the apple rings into the batter and let any excess drip off.
Pan-fry the apple rings in a large greased (I brush coconut oil in the pan) skillet over medium-low heat until browned on both sides.
Remove the apples from the pan and immediately toss in the cinnamon sugar mixture to coat. Repeat with apple slices.

*You'll likely have extra batter leftover after coating 2 large apples. You can either slice more apples or simply cook the rest of the batter as pancakes. I like to sprinkle some extra cinnamon sugar on each pancake as it cooks.
