Buffalo Cauliflower Steaks with Blue Cheese Coleslaw

1/4cupGreek yogurt blue cheese dressingor your favorite blue cheese dressing
2tablespoonsfinely chopped fresh parsley
1tablespoonminced red onion

Instructions
For the Buffalo Cauliflower:
Preheat oven to 400°F convection (or 425°F if you don't have a convection setting)
Line a baking sheet with parchment paper.
Slice the cauliflower from top down to the bottom/core in 1 inch slices. You should end up with 3-4 "steaks" from the center of the cauliflower.
Place cauliflower steaks on the parchment paper and brush both sides with the buffalo sauce. (*see note)
Season with salt and pepper.
Roast for 20 minutes, carefully flipping half way through.
Transfer to a plate and serve with blue cheese coleslaw.
For the Blue Cheese Coleslaw:
Combine all ingredients in a small bowl and mix until well combined.

*Use leftover cauliflower for another recipe or roast on another baking sheet with more buffalo sauce. They won't be "steaks" but they'll taste just as good!
