These chicken meatballs bake in the oven for a hands-off, low-mess dinner. They come out tender with plenty of flavor and can be used in everything from pasta to quick sandwiches.
½cupbreadcrumbsuse gluten-free if needed (*see note)
1large egg
2garlic clovesminced
1teaspoonItalian seasoning
Salt and black pepper to taste
Olive oil spray or 1 tablespoon olive oil
Instructions
Preheat the oven to 400°F. Line a baking sheet with parchment paper or lightly grease a baking dish.
In a large bowl, mix the ground chicken, mozzarella, Parmesan, breadcrumbs, egg, minced garlic, Italian herbs, salt and black pepper until just combined.
Form the mixture into about 16 meatballs and place them on the prepared baking sheet.
Lightly spray or brush meatballs with olive oil.
Bake for 18–20 minutes, or until cooked through and golden brown.
Serve warm with a sprinkle of extra Parmesan, alongside pasta, salad or in subs.
Notes
*If you don't have gluten-free breadcrumbs on hand, you can substitute oat flour.
