Thai Kohlrabi Noodle Salad
Make this colorful, easy Thai flavored salad with kohlrabi noodles! Spiralized kohlrabi noodles make a healthy salad base. Pair with fresh crispy vegetables & an Asian inspired vinaigrette.

FOR THE SALAD

kohlrabi
spiralized into noodles
1
large red pepper
thinly sliced
1
cup
shredded carrots
1
cup
shredded red cabbage
2
green onions
sliced
2
large radishes
thinly sliced
1
jalapeño pepper
seeds removed and thinly sliced
1/4
cup
fresh cilantro leaves
sesame seeds for garnish
FOR THE DRESSING

tablespoons
avocado oil
1
tablespoon
sesame oil
2
tablespoon
rice vinegar
2
tablespoons
soy sauce

honey

juice of 1/2 a lime

lemongrass paste

minced ginger

Instructions
Combine all the ingredients for the salad in a large bowl and toss together.
Whisk together all the ingredients for the dressing in a separate bowl. Pour over the salad and toss until well coated.
Garnish with sesame seeds and lime wedges.
