Combine all ingredients in a high powered blender and process until smooth, stopping to scrape down sides as needed.
Pour into two glasses and serve.
Notes
*I like to buy cooked beets sold packaged in the produce section rather than deal with peeling (and all the mess) that comes along with red beets. You can also use a large (peeled) raw beet if you prefer but the smoothie tends to be a little less smooth in texture.
