Ingredients

cups
cooked quinoa
1
pound
ground beef
1
clove
garlic
minced

frozen peas
thawed
1/4
cup
pesto
any kind prepared or homemade

can diced tomatoes
1/2
cup
ricotta

tablespoons
balsamic vinegar
salt & pepper
4
ounces
burrata
ricotta or mozzarella for topping
Instructions
Preheat oven to 350 degrees.
Heat a large skillet over medium-high heat. Add beef and garlic and cook until beef is browned. Drain and transfer to a large bowl.
Add the remaining ingredients to the bowl and toss to combine.
Pour the mixture into a baking dish.
Top with dollops of burrata, ricotta or mozzarella, whatever you have on hand.
Bake for 10-12 minutes until cheese is melted.
Remove from oven and serve.
