Combine all the ingredients in a food processor and process until finely chopped and the consistency of wet sand. When pinched together with your fingers, the mixture should hold.
Divide the crust evenly into 4 ramekins and press down firmly with your fingers or the back of a spoon. Set aside.
For the filling
Combine all the ingredients in a medium bowl and mix together with a hand mixer on high speed until well combined. Alternatively, you can do this in a stand mixer or by hand.
Spoon the filling into the ramekins on top of the crust and smooth out with a spoon.
Top the cheesecakes with the whipped cream, mint sprig and garnish with a dusting of cocoa powder.
