These mini sausage and egg waffle sandwiches are the perfect breakfast or even brinner! Fresh greens, melted cheddar, herbed scrambled eggs and breakfast sausage make the perfect bite.
Prepare the waffles as directed making small sandwich sized portions.
Whisk together the eggs, cheddar, milk and herbs until a medium bowl.
Heat a skillet over a medium flame and add the breakfast sausages. Cook until warmed through if precooked or cook until fully cooked if raw. Remove from the skillet and set aside.
Add butter to the skillet then pour in the egg mixture and cook until scrambled.
Layer the spinach on top of a waffle, then a sausage patty and top with the scrambled eggs. Top with another waffle to create a breakfast sandwich.
