This everything bagel breakfast strata is perfect for Mother's Day. With bacon, cheese, basil and sun-dried tomatoes it's a delicious gluten-free brunch!
Toss cubed bagels and melted butter together, spread out on a baking sheet and bake for about 10 minutes until toasted.
Meanwhile, heat a skillet over medium-high heat. Once hot, add bacon slices and cook until crispy. Transfer to a paper towel lined plate reserving the bacon grease in the skillet. Crumble the bacon once cooled.
Add the diced onion to the skillet with the bacon grease and cook over medium heat until softened, about 5 minutes.
Whisk eggs, milk and half of the cheese together in a medium bowl.
Place the toasted bagel cubes, sun-dried tomatoes, basil, cooked onions and 3/4 of the crumbled bacon to a large bowl. Pour the egg mixture into the bowl and toss until well combined.
Pour the mixture into a baking dish. Top with the remaining cheese and bacon and bake for about 30 minutes until set and top starts to brown.
