How to Make the Famous Utica Greens

Utica greens are a classic Italian-American side dish originating in upstate NY.

The dish includes: -escarole -garlic & onions -prosciutto -pickled hot cherry peppers -cheese  -breadcrumbs

There's nothing quite like the flavor & will turn any greens hater into a convert!

A head of escarole is blanched to remove bitterness.

The topping is made from breadcrumbs & pecorino romano cheese with olive oil & spices.

Onions, garlic, prosciutto & pickled hot peppers are sautéed.

Then the escarole is added.

It's topped with the cheesy breadcrumb mixture.

And broiled until golden & crispy.

Serve it with anything from meat to pizza to pasta.
