While Kari and I are on our way to Philly and considering Thanksgiving is only 5 days away, I figured it was a good time to do a Thanksgiving recipe round-up! Most people are probably doing their holiday food shopping this weekend (others are running marathons & half marathons) so hopefully this is good timing.
Appetizers:
Appetizers on Thanksgiving almost seem ridiculous considering the gluttony of the main meal itself but most people want something to pick at before sitting down to the turkey, right? Here are a few light, yet still delicious options.
Pumpkin goat cheese dip with caramelized onions
Spicy rosemary roasted almonds
Sides:
Arguably the best part of Thanksgiving. Who needs turkey?
Coconut crusted acorn squash rings
Brussels sprouts with crispy shallots
Rosemary dijon roasted potatoes
Apple & lentil stuffed acorn squash
Dessert:
I hope there’s a pumpkin pie on your table, but 1 dessert is never enough. So, here’s a few more.
Pumpkin cranberry chocolate chip bars
Pumpkin walnut chocolate chip bars
And if you end up with leftover pumpkin, you can always make these.

I totally made another batch of those pumpkin bars when i got home last night. I topped them out of the oven with vanilla frozen yogurt. Holy cow they were amazing.

Those all look amazing! My kids and nephews insist on me making my mashed potatoes every holiday. My "secret" is sour cream and cream cheese (no milk!!). They're creamy and oh so yummy.

Mmmm...I can't wait for Thanksgiving! I will definitely be making quite a few of these. I'm particularly excited about the stuffed acorn squashes. The combination of apple and lentils is brilliant!
