Paleo challenge: day 21

From Jan 1 – 31 I’m doing a strict paleo (slightly modified Whole30) challenge with my CrossFit box. I decided to journal the month in food on here (in addition to normal posting) after getting a huge positive response on my Facebook page. I’m also going to detail the amount of sleep I got, the workout for the day and any other relevant notes. I’ll only detail drinks when it’s something other than water or tea, but note that I typically drink 80-100 ounces of water a day. I’ll link to recipes (either mine or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted.

Notes for the day:

21 days in and I finally ate something for breakfast that could’ve passed for lunch or dinner and didn’t include eggs. I’m not sure I’m ever going to get used to the idea of eating “normal” meals during the breakfast hour and I’m not sure I ever want to actually, but I think I ate about a dozen eggs in the span of 4 or 5 days last week and that just feels like a bit much so I’m trying to scale that back this week.

Sleep:

8.5 hours

Workout:

Breakfast:

chicken sausage + apple + spinach scramble

1/2 banana

strawberries

blackberries

almond butter

coffee with coconut cream

Paleo sausage breakfast

Lunch:

3 slices cauliflower crust pizza (amazing & recipe is coming)

toppings:

crumbled meatballs, diced tomatoes, cilantro

paleo pizza crust

Dinner:

dijon almond crusted pan seared tilapia

roasted brussels sprouts + shallots + dried apricots

1/2 roasted sweet potato

almond crusted tilapia

Snacks:

none (but I did end up eating a paleo pumpkin mug cake last night after the post went up, fyi)

Bravo to you for sticking with this tricky diet! Love your food choices so far, and that cauliflower pizza crust looks delish!

Didn't plan on it initially but I think I might have to. I'm floored at how good it tasted :) Just need more tilapia now!

I am so psyched for that cauliflower recipe!! I've seen so many different versions but many of them include cheese, which just is not paleo approved. Can't wait! :)

exactly! Every one I found had cheese which I'm very excited to try after the 30 day challenge but I needed something in the interim.
