This Irish Cream Cheesecake is no-bake which means you can put it together in minutes for the perfect St. Patrick’s Day treat.
I feel like everyone goes kinda crazy for no-bake cheesecake.
Kind of like the herd of hungry vultures behind me right now attacking the poor gate agent who just told us our flight home is delayed 3 hours then offered up dinner vouchers to everyone in the same breath.
Honestly, I’m not sure the free $12 is even worth that line especially considering it’s not good for alcohol.
But seriously, no bake cheesecake seems to be where it’s at.
I made real cheesecake exactly once in my life and between cracks, spring-form pans and precise cooling instructions, I’m over it.
These Blueberry mini cheesecakes were slightly less anxiety inducing but still not as great as this no-bake recipe.
I’m also over graham cracker crusts (not really a fan) and crazy fattening fillings so in true Running to the Kitchen fashion, this one is healthified a bit and of course, being St. Patrick’s Day in 4 days, boozed up too.
If only that Irish Cream (I’ll even make due with some Baileys Irish cream ice cream) would magically appear next to me right now as I listen to every single annoying snow bird flying from West Palm Beach to NY yell (because they’re all 70+) in their decrepit raspy voice into the phone to tell the person on the other side we’re delayed.
I might’ve said I couldn’t really care less about St. Patrick’s Day besides these corned beef hash breakfast sandwiches, but I’m going to have to take that back.
Irish Cream can be added to the list especially when it’s made with an oat/almond crust, a crème fraiche/neufchatel filling and served with traditional Irish coffee.

No Bake Irish Cream Cheesecake
Ingredients
For the crust
- 1 cup oats
- 1/2 cup almonds
- 1/4 cup coconut sugar, palm sugar
- 1/2 teaspoon cinnamon
- 1/4 cup coconut oil
- 1 teaspoon vanilla
For the filling
- 8 ounces neufchatel cheese
- 4 ounces creme fraiche
- 3 tablespoons Bailey’s Irish Cream
- 1/4 cup coconut sugar
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla
For the topping
- whipped cream
- fresh mint sprigs
- cocoa powder
Instructions
For the crust
- Combine all the ingredients in a food processor and process until finely chopped and the consistency of wet sand. When pinched together with your fingers, the mixture should hold.
- Divide the crust evenly into 4 ramekins and press down firmly with your fingers or the back of a spoon. Set aside.
For the filling
- Combine all the ingredients in a medium bowl and mix together with a hand mixer on high speed until well combined. Alternatively, you can do this in a stand mixer or by hand.
- Spoon the filling into the ramekins on top of the crust and smooth out with a spoon.
- Top the cheesecakes with the whipped cream, mint sprig and garnish with a dusting of cocoa powder.

Would this recipe still work if I use these tulip paper baking cups? Or would the filling be too soft? I have to make a 100.
I haven’t tried it but I’d probably suggest something a little more sturdy than paper baking cups, maybe small Dixie-like cups instead?
I made these last night to bring to my families St. Patrick’s Day celebration tonight which is 6 people, so I made smaller portions. I tasted the filling and crust last night and it’s so delicious! I made one change and used Kahlua since I didn’t have any Irish Cream on hand (I know, St. Patrick’s Day FAIL!), but it’s still so tasty. I’m going to make them again for a dinner party this weekend . Such a great recipe!
