Paleo challenge: day 8

From Jan 1 – 31 I’m doing a strict paleo (Whole30) challenge with my CrossFit box. I decided to journal the month in food on here (in addition to normal posting) after getting a huge positive response on my Facebook page. I’m also going to detail the amount of sleep I got, the workout for the day and any other relevant notes. I’ll only detail drinks when it’s something other than water or tea, but note that I typically drink 80-100 ounces of water a day. I’ll link to recipes (either mine or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted.

Notes for the day:

These are a challenging next 3 days as I’m at a company meeting during the day (and subject to whatever lunch is served), spending 4 hours in the car and waking up way earlier than normal. After today there’s no possible way to get 8 hours of sleep, I’m hungry both from the extra hours of being awake and the boredom of sitting for hours on end and I literally have no time to squeeze in a workout. Hoping to at least keep the eats clean even if the peripheral stuff falls by the wayside temporarily.

1 slice bacon

blackberries

almond butter

coconut flour pecan raisin cookies (instead of chocolate like the recipe calls for I added raisins & pecans)

roasted vegetables

mixed green salad with cherry tomatoes

pickles

Dinner:

leftover short ribs

mashed cauliflower

sautéed brussels sprouts
