I have a new found respect for actors and models.

Not to the level where I can justify their millions or anything but woah, that whole smile but make it look natural and not like you’re totally awkward because you did your hair, put on way more makeup than normal and are now prancing around your friend’s backyard climbing downed tree limbs in three different outfits thing is not as easy as it looks.

Maybe they skip the prancing part though and that’s what makes it easier.

Or maybe getting a paycheck to do it helps too.

I could probably do a lot of things if a million dollar paycheck was at the end.

Mango Kiwi Breakfast Quinoa

Servings: 2 servings

This mango kiwi breakfast quinoa is a healthy and fun way to change up breakfast.

Ingredients 

  • 1/2 cup uncooked quinoa, any color will do
  • 1 cup water
  • 1/2 cup chopped kiwi
  • 1/2 cup chopped mango
  • 2 tablespoons unsweetened shredded coconut
  • 2 tablespoons pecans
  • 1 cup almond milk, or any milk of choice

Instructions 

  • Place quinoa and water in small saucepan and bring to a boil. Cover and simmer until water is all absorbed. (you can use any liquid here. Cooking it in orange juice would be great too!)
  • Once quinoa is cooked, divide into bowls and top with mango, kiwi, pecans and coconut.
  • Pour almond milk into bowl and enjoy.

  1. I love the new sidebar picture!! Gorge. I do, however, totally get what you mean. I had a photoshoot last spring for PT and my blog, and felt SO awkward the entire time! Especially for the sports bra pictures.
    Anyway, this breakfast quinoa sounds delish! I haven’t had quinoa for breakfast in quite a while.

  4. I’ve tried white quinoa as cereal before and it came out kind of mushy. I’ll have to try red and see if it holds up better! Love the addition of kiwis and mango as well.

  5. I hate taking pictures of myself and start to get annoyed after five or six and then I just look pissed in the rest of them-not fun. I’m sure yours will look great though! I’ve never had quinoa for breakfast before but I’m intrigued, it certainly looks good!!

  8. That looks really good. I’ve never tried the red quinoa, does it have more of a chew factor than the white? I find the white ok but a bit mushy. In your photos it looks like the red has more staying power.

    1. I like red better for that exact reason. I definitely think it holds up a bit more than the white.
