Chocolate coffee peanut butter muffins

These chocolate peanut butter muffins have a hint of coffee in them. They’re grain free and sugar free!

There are 2 topics I want to cover today.

#1: It’s been one week (please read with the tune of the Barenaked Ladies song in your head) since I’ve had Rita’s, a rainbow sprinkled vanilla cone and/or self-serve frozen yogurt. That, my friends, is a summer record over here and the reason for these muffins.

#2: I’m about to lose my shit (what an expression right? Like how does someone actually go about doing that?) if I see one more blogger whore themselves out to big brands on twitter, instagram or facebook. Did you bake something with Hershey’s kisses in it? Oh, how freakin’ original. Why don’t you tweet Hershey’s up the wazoo hoping they’ll share your post and you’ll be like totally famous for a day. Knock, knock. Who’s there? Oh, a little thing called TRANSPARENCY. The world sees right through you.

Maybe I should tweet Ghirardelli, Skippy and Bob’s Red Mill like woah today shoving this post in their face. “.@PBandSkippy makes the BEST Chocolate Peanut Butter Muffins!” Apparently that’s the thing now.

Wouldn’t it be a hell of a lot more satisfying to know a brand (or anyone for that matter) shared your recipe because they actually genuinely liked it and not because you pretty much harassed them into it?

Be genuine, be original, work with brands when it fits, but good lord, please stop selling your soul to the blogging pageview devil.

It’s been one of those weeks where I want to delete every social media account I have and just cook in my kitchen, take photos and share them with you guys on here in a vacuum. So thanks for entertaining that little rant…

Um, yum. I pretty much adore chocolate, coffee and peanut butter more than my husband INDIVIDUALLY, so combining them is almost sinful.

ps- they’re grain free and sugar free. Boo-freakin’-yah!

Chocolate coffee peanut butter muffins

Grain and sugar free chocolate muffins with peanut butter and coffee.
Author:
Recipe type: muffins
Serves: 10 muffins
Ingredients
  • ½ cup almond flour
  • ¼ cup coconut flour
  • ¼ cup ground flax seed
  • 2 tablespoons unsweetened cocoa powder
  • ½ tablespoon cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 large banana, mashed well
  • 2 eggs
  • ¼ cup strongly brewed coffee
  • ⅓ cup creamy natural peanut butter
  • ½ tablespoon vanilla extract
  • ¼ cup chopped dark chocolate chips
Instructions
  1. Preheat oven to 350 degrees. Line a tin with muffin wrappers.
  2. Combine dry ingredients in a large bowl.
  3. Combine wet ingredients in a small bowl and whisk until fully mixed together.
  4. Pour wet ingredients into large bowl and mix to combine.
  5. Add chopped chocolate chips and fold into batter.
  6. Scoop batter into muffin liners and fill about ¾ full.
  7. Bake for 15-18 minutes.
  8. Remove from oven and transfer muffins to a cooling rack.

    sorry I haven’t been by to give your blog some love, girl! I couldn’t pass this up though seeing how you’ve combined two of the greatest flavor combos on earth. I’m with you on the branding thing. When did food blogging become so…commercial-marketing-social-media heavy? I don’t work with anyone, and I don’t know who reads my shit, but the only time I really call out a brand is if it’s something I’ve never used before and will continue to use. To each their own :) How did you manage to make such tasty looking, and healthy muffins? You’re killing me. But not really. That phrase is up there with “lose my shit”. I mean really. How could you be killing me?

    Seriously – when did food blogging (or blogging in general) get so commercial/promotion heavy? My stance is if you want to make really good money, do something else. Blogging is a labor of love for me – if I can monetize it enough to cover my expenses (and in a way that doesn’t make me feel like I sold my soul for a $5 product sample), I’m happy.

    Love the chocolate coffee pb muffins! Thinking I need to vegan-ify these with some flax eggs…

      Chocolate, coffee and peanut butter – what a great combination! They sound like delightful little muffins sent from Heaven! I’m going to try and make these & hope they come out looking as great at yours do (I’m a little doubtful though). Thanks for sharing this!

    You know, I am not that bothered by people sharing it with the big brands. It’s not necessarily something I would do myself but it is kinda the point of social media. It’s there to be used – just make damn sure your recipe isn’t junk before you tweet it to a big brand only to have them not retweet it, haha.

    These look super yummy! I have had issues in the past with flaxseed tasting…fishy…after being baked. Any tips?

    I love your rants! I love your photos! I agree with you how food bloggers are just becoming a little ridiculous with it! Some of the biggest food bloggers are not into social media and are not begging companies for products; people go to there blogs because of the food, content, and photos! I still have that tune stuck in my head as I am writing this :) ! I love the 90’s!
