From Jan 1 – 31 I’m doing a strict paleo (Whole30) challenge with my CrossFit box. I decided to journal the month in food on here (in addition to normal posting) after getting a huge positive response on my Facebook page. I’m also going to detail the amount of sleep I got, the workout for the day and any other relevant notes. I’ll only detail drinks when it’s something other than water or tea, but note that I typically drink 80-100 ounces of water a day. I’ll link to recipes (either mine or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted.

Notes for the day:
1 week down! Can’t say I feel much different. It’s funny because most of the people at my box seem to have experienced some sort of “carb flu” in the first few days but I haven’t felt the least bit different over the past week. Guess that means I was eating pretty well beforehand.
Sleep:

Workout:
CrossFit (modified again. A pyramid wod of running, hollow rock holds, lunges, pistols & russian twists)

Breakfast:
pumpkin waffle (minus maple syrup)
almond butter
1/2 banana
strawberries
blackberries
pecans
coffee with coconut cream

Lunch:
sautéed sage & apple chicken thigh
sautéed kohlrabi greens & spinach
cabbage & carrot salad

Dinner:
spaghetti squash
tomato meat sauce

Snacks:
handful of nut & dried fruit mix

All the meals look fabulous! The pumpkin waffle, yummy!! I think you were eating pretty much Paleo, that’s probably why you didn’t have any reactions or withdrawals of other foods. Good for you for doing this. Does your Husband eat Paleo too?
He eat whatever I put in front of him
haha but he does eat other non-paleo stuff too. He’s the least picky eater ever thankfully!
Ugh the carb flu. When I tried paleo last year, I felt awful for the first 2 weeks. It was horrible. So great you’re not going through that!

Would you mind telling me what kind of almond butter and coconut cream for your coffee you buy? Thanks so much
I usually buy trader joe’s almond butter. the creamy with salt one
The coconut cream I use in the coffee is just a regular can of full fat coconut milk that I leave in the fridge overnight. The cream part goes to the top and I scoop some of that off and mix into the coffee.

I was craving comfort food and that meal definitely did the trick even without the pasta!
