Paleo challenge: day 13

From Jan 1 – 31 I’m doing a strict paleo (slightly modified Whole30) challenge with my CrossFit box. I decided to journal the month in food on here (in addition to normal posting) after getting a huge positive response on my Facebook page. I’m also going to detail the amount of sleep I got, the workout for the day and any other relevant notes. I’ll only detail drinks when it’s something other than water or tea, but note that I typically drink 80-100 ounces of water a day. I’ll link to recipes (either mine or other people’s) when applicable, but I don’t usually cook from recipes for myself so if you leave a comment asking for the recipe for something, there is none unless otherwise noted.

Lazy Sunday, clean eats. Not much more to say.

Breakfast:

1/2 grapefruit

pumpkin pancakes

fried egg

1/2 banana

strawberries

blackberries

coffee with coconut cream

Lunch:

spaghetti squash

tomato meat sauce

watercress

sausage & apples

carrots

Dinner:

pecan parsley crusted salmon

roasted broccoli

sautéed mushrooms

Snacks:

none

    How do you get your pumpkin pancake to stay in the form of a pancake? I have tried this recipe 3 times, and it always falls into pieces when I go to flip it!

      Running to the Kitchen says

      you kind of have to shake the pan so it forms a circle or spread the batter with a spatula to get the normal pancake shape. Then the trick is PATIENCE. haha. you really want to cook it well before flipping. small pancakes are easier than large ones and a quick shove of the flipper under the pancake so you get at least 3/4 of it on the spatula/flipper thing then flip quickly!
