and then make a salad and a drink.

I have a sneaking suspicion as this weekend progresses it will get quieter and quieter on the blog front right through Wednesday. A summer holiday smack in the middle of the work week? Yeah, I’d be taking a long vacation too if I weren’t saving PTO days for a hopeful European trip later this year.

So with the impending holiday and scorcher temps (at least on the east coast) expected this weekend, here’s an early round up of my favorite salads and drinks perfect for an outdoor party.

Every BBQ needs a side salad and every adult needs a fun refreshing drink, right? Wouldn’t be the 4th without them!

1. Summer corn and tomato salad

2. Israeli couscous Greek salad

3. Lemony brown rice and peas salad

4. Bulgar wheat salad with orange dijon dressing

5. Lemon lavender potato salad

6. Barley, kale cherry salad

7. Roasted strawberry couscous salad

8. Caramelized peaches & onions salsa (not a salad really but great on top of any grilled food!)

9. Shredded bok choy salad

10. Watermelon bacon salad

11. Strawberry tabouleh salad

12. Asparagus, tomato and lemon salad

Every single one of these can be made ahead of time and most even get better with time as the flavors marinate more.

As for the drinks…

they all also happen to be excellent with a splash (or more) of vodka/rum. Unless you’re the one lighting the fireworks. That could get messy.

1. Watermelon lime slushie

2. Coconut lime ice smoothie

3. Cherry faux-ito
