Egg & cheese stuffed sweet potatoes

Lately, I can’t get enough of these.

Sweet potatoes.

Eggs.

Cheese.

Any vegetable mix-in you want.

Instant lunch.

Ok, not really instant since it’s about an hour of cook time. But it’s pretty hands off and if you don’t work from home like me and can’t swing this for lunch, it makes a great dinner too.

This one is filled with:

  • 1 egg
  • 2 tablespoons ricotta
  • chopped baby spinach

Possibilities…endless.

Dam you! I had eggs with a sweet potato on the side the other night for dinner, but never thought of stiffing the sweet potato with it! You are good!!! Have a wonderful weekend!!

Love it! Sweet potatoes are so versatile. I usually chop, toss with a bit of evoo and sea salt, and roast for a great salad topper or side dish. Also great drizzled with lime. Happy weekend to you, too.
