Happy 2012!

Hope you all had a wonderful (safe) New Year’s eve and rang in 2012 in style.

We did it with friends, food, prosecco and cupcakes. Chocolate covered strawberry cupcakes to be exact, and they were every bit as amazing as they sound and look.

Insides filled with strawberries and chocolate, tops covered in strawberry honey whipped cream and finished with a chocolate covered strawberry. It doesn’t get much better than that. This was my first time ever making cupcakes. 2012 just may be the year of them after these. Who needs black eyed peas when you’ve got a bowl filled with cupcake insides and leftover whipped cream? Winking smile

How did you ring in the New Year?

They’re beautiful! And boy, that must have been hard digging out the middles of those PERFECT cupcakes…ack! But the end result of the digging is even better looking cupcakes…LOVE the fruit in them and that frosting. NICE! :)

I know, these were kind of a lot of effort. My patience was definitely tested but having the “insides” to eat along the way helped ;)

Our new years consisted of an epic Scene-It battle with Brent’s family, followed by a night of catching up with old friends over a couple six-packs of hard cider. Couldn’t ask for much more! Happy 2012!

We bought Apples to Apples and played that last night. Board games are always good for a laugh or two ;)

Those cupcakes look amazing. We went to our friends’ house and had peanut butter cheesecake cupcakes stuffed with peanut butter cups. :)

These look amazing! I love how you cut the middle out and added strawberries, thats genius! Talk about a calorie saver. I need to scope out the recipe and make these cupcakes!
