Oat almond & date energy bites

When this publishes, I’ll be in flight to Florida having gotten approximately 4 hours of sleep (if I’m lucky) after a day involving an hour in the car, 4 trains, 4 taxi cabs, no less than 10 annoying work emails, 1 mojito, 1 glass of wine and 1 awesome dinner with friends. Worth it, but I can guarantee I’m exhausted.

Some snippets from the day:

1. Out of at least 30 empty seats on the train, large man with 3 bags decided to sit next to me on the trip into Grand Central. So much for sleeping on the train.

2. My taxi driver from Grand Central to Penn Station was clipping his nails while driving. Ew, ew and more ew.

3. This man was singing to himself, out loud in Penn station. What was more disturbing however, was that I seemed to be the only one slightly surprised by this behavior.

4. The taxi cab driver had to literally kick me out of the cab because I couldn’t understand him well enough to realize that we had arrived at the location I needed to be at.

5. I witnessed a screaming fight in the quiet car between a man trying to sleep and someone talking to their seatmate. Anyone else find the irony in that?

6. I snacked on balls.

Oat Almond & Date Energy Bites

These no bake energy bites taste like a throw back to the Quaker oat chewy bars but with real ingredients and in ball form. Everything’s better in balls ;)

Serves: 9 balls

Ingredients
  • ¼ cup dates
  • ¼ cup oats
  • ¼ almonds
  • 1 tablespoon chia seeds
  • 2 tablespoons pepitas
  • 1½ tablespoons maple syrup
  • ½ teaspoon cinnamon
  • 1 tablespoon coconut

Instructions
  1. Combine dates, oats and almonds in a food process and pulse until finely ground.
  2. Add all remaining ingredients except coconut and pulse until combined and mixture starts to form a ball in the food processor.
  3. Transfer to a small bowl and fold in coconut with a spatula.
  4. Roll dough into balls.
  5. Keep refrigerated.

OMG, that nail clipping thing? That is so gross! And probably dangerous. I can’t handle it when other people clip their nails, I don’t even like doing my own.

And the guy singing to himself? This is how I felt when I lived in SF. Surrounded by crazy, but no one else seemed to be phased.

Yes! I spent 8 hours pulling my hair out over it and guess what it was?….My damn browser was out of date! So it was only an issue for me, others were seeing it fine. I hate tech issues!

I have this theory that people like to sit by thin, pretty young women because it’s safe and then they know someone “undesirable” won’t sit by them.

Your taxi experiences make me fear for mine this saturday.

Love the layout of your recipe – and energy ball bites are always so delicious and travel friendly. One of my co-workers who sits at least 8 desks away clips her nails every so often – and it goes on for like TEN MINUTES. How many fingers could this lady have?!

What a day. At least there were some drinks in there:) thoseQuaker chewy bars were my favorite snack growing up. The cookies and cream was amazing.

The nail clipping thing is HORRIBLE. One time while riding the city bus there was someone 5 feet away from me clipping her nails…without even catching the nail clippings or anything, just letting them fly all over. Ick.

About how many dates are needed for 1/4 cup? Also where can I find chia seeds? I had no idea what they even were until wiki told me tonight.

Rachael- I honestly don’t remember about the amount of dates, I would just put them in a quarter cup measure until it’s full. I find chia seeds at my local health food store in the bulk bins. If you have a whole foods near you, they have them. Also, you can always order them online.
