Good for you zucchini fries

Un buen desayuno. <–I doubled majored in Spanish in college and haven’t used a drop of it since. Kind of tempted to write a whole post in Spanish one day. That could be fun. Winking smile

The pumpkin craze continued by mixing about a 1/4 cup of pumpkin with yogurt + cottage cheese for breakfast. Toppings:

  • grape nuts cereal
  • a chopped up juicy pear
  • pepitas
  • maple syrup

Delicious, but I was hungry by 11:30. I always have this problem with yogurt. Some people say protein heavy breakfasts leave them full longer. Not me though. Bring on the carbs!

Lunch was pretty random. I opened the fridge to see 2 lone zucchinis in the produce drawer. That was it. Hmm…

A few minutes later, I found myself battering, dipping and rolling zucchini fries in a delicious combination of bread crumbs, ground flax seed and nutritional yeast.

And then I ate the entire zucchini in fry form.

I guess there are worse “fries” out there to eat an entire tray of, right?

Since lunch basically consisted of one big vegetable, a snack was soon to follow.

After work I went grocery shopping. I was hungry, without a list and had no plan for dinner. Somehow, I managed to avoid the disaster that was pointing to and walked away only $93 poorer and with the ingredients for a quesadilla dinner.

Mushroom + onion + cheddar quesadillas with some tomato & avocado for good measure. Thoroughly enjoyed on the couch, while watching the second episode of Madmen on Netflix, our new obsession. Loving it so far. It’s funny yet kind of weird/quirky. I think it’s more my cup of tea than Ulysses’ but, I’ve endured enough episodes of 24 for it to be my turn to pick. Winking smile

 

Zucchini Fries

Yield: 1-2 servings

  • 1 large zucchini
  • 1/3 cup bread crumbs
  • 1/4 ground flax seed
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes
  • 1 egg
  • 3-4 tablespoons almond milk
  • salt & pepper

Directions:

Preheat oven to 425 degrees. Line baking sheet with aluminum foil and grease. Cut zucchini into
“fries.” Combine dry ingredients in a shallow bowl. Beat egg and almond milk in another shallow bowl. Dip zucchini fries into egg mixture first then roll in bread crumb mixture. Line zucchini on baking sheet. Bake for approximately 20 minutes, flipping fries half way through.

I love the idea of using cereal as a breading. I actually just ran into this method the other day and instantly fell in love :) You make these zucchini fries look darn good!

My favorite ingredient to use in “fry” form would probably either be sweet potatoes or butternut squash. Both get my toes-a-tingling :D

I LOVE MAD MEN!!! I watched every single episode and Jason would watch every 2-3 episodes with me. I would fill him in on the little details. I cannot wait for the next season to start (next year, boo)

The fries look like they turned out great! And a PBJ snack is always a good thing.

A restaurant I used to eat at when I was a kid would always call these “Zoo sticks” and I never really made the connection until a few years ago. I love how you served them upright in a ceramic container. Definitely some creative presentation, which of course makes for great photos. I hope they were as delicious as they look! Is that a tomato pasta sauce for dipping?

Wow, your WIAW is making me super jealous, it looks amazing! What a fantastic idea with the fries too, sounds good. I definitely love “frying” sweet potatoes the most, but I’ve also done it with zucchini (not your way, which sounds fantastic and I must try it), and eggplant. Yums!

all of your meals today looks delicious and just made me hungry even though I just ate my dinner! hahaha

i LOVE mad men! me and kevin have been watching it for months now and we’re in the middle of season 3. i’m hoping to finish up season 4 before they start showing season 5 but who knows, i have a ridiculous amount of shows on my plate!

Thank you for the pumpkin, yogurt, cottage cheese combo idea! I have all of those things you used to make your breakfast sitting in me house, and I didn’t know how I was going to use the rest of my pumpkin! It sounds amazing and I cant wait to try it :D
